“The blending of varieties is intended to achieve a seamless harmony, a complement between them.”
–Richard Geoffroy, Dom Perignon’s chef de cave.
“Chardonnay is often front and middle, Pinot Noir is middle and finish. The idea is to stretch the wine between the two, to align the two in perfect balance.”
– from Peter Liem’s Champagne
Shovel Blanc is a premium still rosé inspired by the blended wines of Champagne. We source Pinot Noir, Chardonnay and Pinot Meunier from distinct vineyard sites across the Willamette Valley ideal for growing high-acid, vibrant wines. Each lot is strategically farmed, harvested and vinified to create a spectrum of base wines to be masterfully assembled into a singular cuvée Rosé that is Shovel Blanc.
